After three attempts to make my own starter at the urging of YouTubers who claimed it was easy (and it would have been had it worked), I learned the hard way that it wasn’t easy. Maybe it was my bad mojo or something, but the smell was never quite right, I didn’t get anything to rise, even after a month, and I could have satisfied an entire prison with the nasty gray skim of “hooch” constantly found across the top of my sad attempts. I haves ADHD. I had no patience for Strike 4. I needed something to work! So…I had a starter shipped in from Egypt – one of my favorite places in the world.
Despite my skepticism, and about 3 weeks of getting her fired up…this starter is a BEAST. She is HUNGRY and clever – and oh do I love her forgiving ways! Every morning when I feed her, I can leave her all lumpy and bumpy – and she loves the challenge! My girl rises like the wind – and doubles in size every single day, as she gobbles up the flour I feed her. Her voracious appetite transforms her into a smooth, ready-for-action mix that will make your sourdough loaves awesome! All you need to do is feed her. It’ll take about 5 minutes a day, including clean-up. I feed my girl in the morning as I’m making my coffee/Teeccino.

What you’ll need to maintain your starter:
- Small-ish glass jar with lid (“home” for your starter). It will need to be kept out on the counter, or somewhere you won’t forget about her! So if decor is your thing, get a cool looking jar! Just keep in mind that you’re going to be washing it and stirring things in it every day – so don’t make it too complicated.
- All purpose flour (for daily feedings, plus baking loaves)
